Checkout this one -- Winter Beef Kabobs. 1 pound beef top sirloin or beef tenderloin steaks, cut 1 inch thick. 8 ounces medium mushrooms. 2 medium red, yellow, or green bell peppers, cut into 1 inch pieces salt. Seasoning: 2 tablespoons olive oil. 1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano leaves. 2 cloves garlic, minced. 1/2 teaspoon ground black pepper. Cucumber-Yogurt Sauce: 1/2 cup plain, natural, yogurt. 1/3 cup finely chopped seeded cucumber. 2 tablespoons crumbled feta cheese. 1 clove garlic, minced. 1/4 teaspoon ground black pepper. 1/8 teaspoon salt. Cut beef steak into cubes. Combine seasoning ingredients in large bowl. Add beef, mushrooms, and bell pepper pieces to the bowl and toss to coat. Alternately thread beef and veggie pieces evenly onto eight 12-inch metal skewers, leaving small spaces between pieces. Season kabobs with salt, as desired. Line your broiler pan with aluminum foil to make cleanup easier and arrange the loaded skewers on top tray – without crowding. Position the rack so the surface of the pan is about 4-6 inches below the broiler. Set the broiler on high and cook for about 2 minutes. Turn everything over and go another 2 minutes. Repeat until all sides are brown and meat is cooked as desired. Serve with brown rice and seasonal fresh fruit for a warm and satisfying meal that brings back those long ago memories of summer.
