Craving a juicy burger and fries for the big game this weekend?  Try this caveman inspired burger on for size.  A friend of mine turned me on to this recipe (thank you TK) and I am hooked!  Pair this up with last weeks recipe of bacon wrapped sweet potato fries, and you're sure to win big with your family and friends!   Fried Egg Chorizo Burgers with Caramelized Onions   Ingredients   1 lb ground beef 1 lb fresh chorizo (casing removed) 2 red onions, thinly sliced 6-8 eggs 2 tomatoes, thinly sliced 2 avocados, sliced 1 lime, sliced into wedges Salt and Pepper, to taste Coconut Oil   Instructions   Preheat oven to  400°F   In a large bowl, combine ground beef and chorizo.  Mix well with hands and form pattys.  (Mixture should make about 6 large burgers)   Place the burgers on a pan (or grill) and salt and pepper to taste.  Bake for about 20 minutes, or until they are cooked medium to medium well....or to your liking   While burgers are cooking....   Warm about 3 Tbs. of coconut oil in a large pan over medium heat.  Once pan is hot, add the thinly sliced onions and saute until they develop a nice caramel color.  If you are in a hurry, turn up the heat and crisp them up Once the burgers and onions are done, use the onion pan to fry the eggs to your liking   Serve chorizo burger topped with caramelized onions, sliced tomatoes, avocado, a squeeze of lime juice, and a fried egg.  Enjoy!   To view this entire recipe please visit
