Here is another great recipe from the Caveman Feast Cookbook.  George Bryant and Abel James have put together some amazing recipes!  I can't wait to try them all.  The recipe I chose to share with you this week is be perfect for breakfast, lunch, or dinner!   Zucchini Breakfast Casserole prep time: 10 minutes | cook time: 30 minutes | servings: 6-8   Ingredients 2 cups cooked and diced meat (use up those leftovers if you have them!) 1 zucchini, peeled using julienne peeler 1 red onion, diced 4 cloves of garlic, minced 8 eggs 2 tbsp basil Salt and pepper to taste 4-­6 pieces of nitrate free bacon   Instructions Preheat oven to 350°F. Sauté onions and garlic until the onions start to carmelize and remove from heat In a mixing bowl, combine eggs, cooked meat, julienned zucchini, basil, salt and pepper; mix well Add in sautéed onions and garlic and stir until combined Grease a 9"×13" baking dish with olive oil Pour mixture into the baking dish and place in the preheated oven.  Bake for 30 minutes or until cooked through, passing the toothpick test Brown for 3 minutes  under the broiler on high if desired Once the casserole is in the oven, start cooking the nitrate free bacon to your preference on the stove top Cut casserole and serve each slice with a slice (or two) of bacon on top...Enjoy!
