Here’s a great recipe from a client at the Summit Fit Dojo. 2 Tbsp olive oil. 2 Tbsp red wine vinegar. 1 Tbsp finely chopped shallots 1 Tbsp Dijon mustard. 1/2 tsp paprika. 1/4 tsp salt. 1/4 tsp ground pepper. 2 Cups brown rice. 1 Carrot diced. 2 Tbsp chopped fresh parsley. 1-15 oz can lentils OR 1 1/3 cup cooked lentils. Whisk oil, vinegar, shallots, mustard, paprika, salt & pepper in large bowl. Add cooked rice, lentils, carrots & parsley. Stir to combine.
